Red Velvet Cupcakes

I love cupcakes; who doesn't? But, I love red velvet cupcakes more than any other kind in the book! So, when my mom asked me to make cupcakes for my little brother's graduation party tomorrow, I knew exactly what I wanted to make. I mean, this is my party and all, so we should have whatever I want. Naturally. Anyway, I went with an old family recipe that is super easy, and works every time like a charm.

1 box of Duncan Hines Yellow Cake Mix (say what, aren't these red velvet? But trust me!)
1 pckg of Dream Whip (in the baking aisle)
4 eggs
1 cup of water
2 T of cocoa
2 T oil
2 1/2 T of red food coloring

1. Pre-heat the oven to 350 degrees. Then, take the first four ingredients and combine them all together in the mixer. Beat for four minutes, or until mixed thoroughly.
Really, the yellow cake mix works perfectly!

2. While this mixes, mix the cocoa, oil, and red food coloring in a separate bowl. When the mixing of the cake  batter is completely combined, add the red food  coloring mixture.

Pretty colors, ooh!

3. Pour into cupcake trays, and bake for about 18-20 minutes. Once they are cool, ice away! Start with one crumb coat (aka a really thin layer of icing to prevent crumbs from getting in the icing). Then, add a thick second layer, and decorate!

After being baked...the dream whip makes them perfectly fluffy!

Whenever I am in the mood for something simple to make (that is still hot), I always choose paninis. I love the combination of warm melted cheese with different types of meat all encased by toasty and crisp bread. So the other day after a particularly trying day at work, I came home with an appetite for a turkey panini. Here's how it turned out:

Rye Bread
Rotisserie Turkey
Colby Jack Cheese
Baby Spinach

1. First, butter both sides of the bread until covered completely. Then, add all of your ingredients: sliced rotisserie turkey (you can usually find this precooked in the grocery), two slices of colby jack cheese, a handful of baby spinach, and about three slices of tomato.

Everything all arranged for my panini :-)

2. The only thing left is to do is cook your panini! I like using a George Foreman grill, which is really easy to use and clean up. I usually cook my sandwiches for about 8 minutes, which leaves everything cooked, but not too smashed. Resulting in this:

Possible Wedding Nails?

I know I am not even engaged yet, I know. But when I finished my nails, I thought about how perfect they would be for a wedding. The pale pink offers such a feminine base to one of my favorite necessities, glitter.

You know, it's really pretty weird that I even decided to do my nails this color. Usually, my nails are always extremely bright colors, especially in the summer. Well, here we are, at May 26, and my nails are pale pink. This is something I would usually reserve for during the school year, but for some reason, it just felt right now.

Anyway, I am using Essie's Allure with Sally Hansen's Diamonds as a top coat (except it's really only on about half my nails, as a gradient). I'm pretty pleased with how it came out. However, I do get kind of annoyed at how it always takes quite a few coats with just about any Essie nail polish. Whatever, I still keep buying it. Pin It

Thankfully, I didn't have to work a full shift today. As a result, there was plenty of time to get dressed after work and see Bridesmaids with my bff from home, Ale.

As I was getting dressed, you would have thought I was going to the prom! I tried on quite a few outfit combinations, and once I decided that I liked this one enough, I just kept playing with my jewelry (and my moms, of course) until I found something I liked. This outfit was nice and light to keep me cool on this humid summer day, while still looking cute and fun. Plus, I love the ruffles of this skirt. No matter how many times I wear this, I love how feminine it always looks in the end.

Do you ever have days like I did today? When just everything you try on just doesn't seem right? I find that very frustrating. I mean, I was just going out to the movies, and I was acting like this was the most important day in my life. HARDLY.

Anyway, the movie was fantastic! If you are into crude humor, you'll hate it. Usually, I hate this kind of movie, but I ended up really liking it a lot. Plus, I saw a lot of trailers for movies that I am definitely going to have to go back and in the near future (oh, and shell out 10.50 of my hard earned dollars too)! Pin It

After working the past seven straight at Target, I finally had my first day off! All I can say is, FINALLY! My legs and feet had really been starting to kill me from standing on my feet all day, and I really needed a chance to relax. Despite my pounding legs, I still went for my run this morning. Oh, nbd at all.

I wore this outfit for my chill day around the house. I just about finished cleaning my room and all of the college stuff I brought back with me, painted my nails and toenails, and watched Phantom of the Opera and The Runaways. I wanted to wear something that I would feel comfortable in all stay, but still look presentable enough to run out to the store for last-minute ingredients for dinner tonight. Overall, this was the perfect look for that.

Chicken Tacos

As a result of the wonderful chicken kabobs I made last week, there was some leftover chicken. I wasn't really sure what to do with it, until I came back from work really late one night last week and was in the mood for some tacos. So, I decided to make chicken tacos and clean out the fridge in one process.

Ingredients (but really, just use whatever you want):
Olive Oil
Chicken Breast
Taco Seasoning
Chili Powder
Black Beans

1. So first, I chopped the chicken breast, and added it to a cooking pan where olive oil had already been heated over medium high heat. To the chicken, I sprinkled on some (okay, a lot) of taco seasoning, cumin, and chili powder. Most people would only use a really little bit, but I like things to have some kick to them!

2. So while that cooked, I heated up some tortillas in the microwaves, and shredded some cheddar cheese. Once the chicken was done, and I added it with all of the other ingredients. Voila, chicken tacos. 

Mmm tacos!

As you can tell, I'm not much for really cooking or measuring or having things perfect (that's only in baking). I do like to follow recipes, but only when I have time, which I usually don't. Now that my mom is home again, look forward to seeing some of her signature recipes making an appearance on the blog!

Graduation No.2

Today, I went to my second graduation of the month: Hood College. I was very happy to be back at my school, with my friends, and of course, see my boyfriend graduate with a degree in Math(ew.) Anyway, the only thing I kept thinking about is how that would be me next feels like move in day was yesterday. But until then, I'm just going to cherish every moment.

Chicken Kabobs

On Tuesday, the weather was nice enough to permit some time to go out on the deck and make one of my favorite things...chicken kabobs! These are extremely simple to make, and take almost no time at all. Plus, you can really do whatever you want to them. Here are some easy guidelines.

1. Figure out what you are going to need, and prep! Here, I chose chicken breast (marinated overnight in teriyaki sauce) onion, red and green bell pepper, and pineapple. All of these taste great grilled. You'll notice in the photo below just how many dishes I wasted...I am so OCD, this was the only way I wanted to do it. I'm sure normal people could just sort these on one big plate.

2. Skewer, and pop on a hot grill! Try and make sure chicken goes on the ends, it will hold everything together the best (that is what my dad has always told me, at least).

3. Let them cook! Another great perk of this recipe: super quick! These took about 8-10 minutes to cook completely.

I am loving being home. LOVING IT. Way more than I ever thought I possibly would. I thought I would hate still having a curfew, and spending all of my time at Target. I never thought I would get to see any of my friends, and I thought I would miss everything about living on campus. Thankfully, all of that is proving to be untrue. I don't really have a curfew (so far...), I've got to see my friends a lot, and Target hasn't taken over my life yet. But really, one of the best things about being home is having double the wardrobe. 

Basically, having a mom who is almost the exact same size as me (okay, an tiny bit smaller,) is awesome. Even better, is when she has the same taste as you. Lucky for me, my mom is both of these things. So all this summer, I will be borrowing whatever I can get my hands on. If I have it my way, I will make off with a couple of things that she forgot about and lets me have. Exhibit A, the jean jacket above that I convinced her to let me have last fall. Win. 

So really when you look at my outfit, basically everything is from her other than the accessories. I wanted an outfit that was cute and casual for when I went out to dinner with some friends from high school tonight, and her wardrobe is filled with perfect summer essentials like these. A blessing, seeing as I really haven't unpacked any of my stuff from school yet.

Okay, I think I'm done my rambling. In conclusion, I have a truly awesome mom.I can't wait to get more use out of her wardrobe this summer!

Chinese Chicken Salad

I've decided to add a new feature to my blog while I am home. It's one I would like to have while at school, but I honestly don't cook at all while I am school. Anyway, I am getting ahead of myself. This summer, I'll actually have a lot of time to do some cooking, so I thought I would talk about my adventures in the kitchen on my blog. Although I would like to eat a lot healthier, I can't say that everything is going to be super fun would that be?

Anyway, last night for dinner I decided I wanted to have Chinese chicken salad, which is very easy to throw together. Here's what you need:

1 chicken breast
1/2 of an orange
1/4 cup black beans
1/2 of a green bell pepper
handful of peanuts
2 tablespoons peanut sesame dressing

Things I wish I had, but didn't have on hand:

So, all you have to do to put this recipe (HA) together is grill the chicken, drain the black beans, and chop up the green bell pepper and the orange. Voila, delicious salad! Mm when I made this yesterday I was SO hungry so the first bite I had was just about the best thing I had ever tasted.

If you can't find the equivalent of peanut sesame dressing, here is a recipe for how to make some. However, I can usually find some at Target, which is delicious!

SHUT UP! SHUT UP, SHUT UP, SHUT UP! (I didn't say anything, you think. Or is that just me, thinking about Mean Girls). First off, let me start off by commenting on how I am not taking a picture in front of a radiator. This is a great accomplishment for me. I owe it to the fact that I am home for the summer, have time on my hands, and am not afraid of being seen by people. So, here's to more photos outside.

Anyway, I feel like I belong on a yacht. Or possibly in a J.Crew catalog (okay, that's a little vain). However, I am loving the combination of Breton stripes with wide-legged white linen pants. It was perfect for this cool summer day spent running errands and visiting my Grandma. Unfortunately, starting tomorrow I'll be back to work at the wonderful Target, so outfit posting alone is going to limited. However, I will do my best to actually get dressed after work. Pin It

Never a dull moment.

Well, I don't know about you guys, but it's never a dull moment at my house. I got home yesterday at 9:30 p.m., after spending the last three days straight writing my nine and a half page French paper, and packing up my entire room (so that's why I've been MIA on here recently). Then today, it was off to YCP (aka York College of Pennsylvania) for my older brothers graduation, and then back home to take pictures for my littles brothers senior prom. No place like home, right?

Anyway, now that I am back home, I'm trying to unpack all my belongings into my tiny bedroom. Ugh. I wouldn't mind so much, except that my roommate and I are moving back in the exact same room in about three months. So really, by the time I have unpacked and organized things to my liking, it will be time to pack back up again, and put everything where it was the last time. Le sigh.

I had no intention of dressing up today. I was planning on wearing old shorts and a t-shirt, and chilling out in the library all day stretched across one of the comfy couches so I could write my 12 page French film paper. But then I remembered I was getting inducted into the French Honor Society, and today was the Everybody, Everywear challenge. So there went that idea.

Although I have a lot of floral print in my closet, I ended up picking this dress that isn't completely covered in floral. I just think it has such a pretty shape, and I love that I can wear it with a lot of different colors. What do you guys think?

Sup finals? Definitely did not see you there. Thankfully, I only had one and it was today so I'm all done (technically). I still have to write a 10-page French paper on the role of women in French new wave films which is due on Thursday, so hopefully I can get that done in a decent amount of time. 

So let me just talk about how I am loving this outfit. I got this skirt for $6 at Old Navy this weekend, and I am in love with the cut and the color! Coral is so big for this summer, and I love that this is actually a color that looks really nice with my pale skin tone. I paired it with aqua blue, which is basically what I have done every other time I have worn coral within the last month. Whatever. It works, n'est pas? I also added this multi-strand necklace which I love, and my denim jacket that I just cannot live without. Perfect outfit for a beautiful day.

Happy Mother's Day

This is my mom and I on Easter this year, and she is honestly the best mom a girl could ask for. First us, let's just note that she is the same size as me, which means everything I'm wearing in this photo is borrowed from her (excluding my class ring).

However, even if we weren't the same size, I would still love her all the same. She is the hardest worker I know, and she inspires me everyday to do my best and make good decisions. I can only hope that one day I can be as good of a mom as she is to me! Pin It

So it's the 4th day of May (let the force be with you - teehee!) and it's 45 degrees in Frederick, Md. Really? Really weather gods, how is this fair? We Marylanders have been putting up with crappy rainy weather for the almost everyday throughout the last five months, and we are ready for sunshine! Well, as you can see, this weather clearly had an large impact on what I chose to wear (swapping strappy gladiators for my boots).

In other news, let's see how many days I can go wearing cardigans with dresses and skirts before the blogging world notices! I'm sure it won't be very long, seeing as I have done it the last three days, and brought it up yesterday and today. So there goes that idea...

But seriously, I'm really into combining my bright cardigans with pieces in contrasting colors! I know, this is an absolutely revolutionary idea (nawt). Today, I felt like the theme was primary colors, except I forgot to wear red. Oh well. Whatever, colors makes me happy, so I'm going to keep mixing my bright pieces! Hello summer, I think I see you.

You might be thinking: isn't that the exact same cardigan she wore yesterday, except in navy blue? Well, I honestly doubt that no one is thinking that, but if you were- you're right! I didn't really realize it until I was fully dressed and I had already took these pictures, but I thought it was kind of funny.

Really, I had no motivation for this outfit today. I haven't worn this hot pink skirt since last year, and it was the first thing I saw in my dresser this morning, so I went with it. I really wasn't in the mood to pace back in forth between my closet and dresser like yesterday morning. Thankfully, I ended up liking how this came out. I've been drawn to wearing a lot of colors as of recent, and I have felt so much more positive doing it! Pin It

Feelin' Tropical

Today, it was supposed to rain. So, I took the most practical approach I could think of, and wore a white mini skirt and gladiator flats. Thankfully, it worked and I didn't see a drop of rain today (just some cloudy skies in the afternoon).

Anyway, I really love this outfit! Today was one of those mornings when I am just walking back and forth between my closet and dresser a countless number of times saying that I have absolutely nothing to wear. Usually on days like these, I end up wearing jeans a t-shirt, and getting on with my life. Today, I actually thought of something really happy! Although not super creative or fashion-y or whatever, I still love this look! Coral and aqua blue are perfect colors for the summer, and pairing them with white really lets them pop. I just felt so relaxed all day, like I belonged on an island, drinking a margarita or something. Well, that won't be happening this summer, but I only have one more week left of school! Woo-hoo!

Multi-colored glitter!

So this is how my nails looked about two weeks ago when I used Frenzy by Sinful Colors, but I am just getting a chance to blog about it now. Anyway, I love how my nails came out! The last couple of times I did my nails, I did not really like the results, but I really love these! The pink and blue tones were really vibrant, and it always caught my eye.

However, this is yet another glitter polish that is only meant to be worn as a fun overcoat to something else. So, in order to get your nails to get your nails to look anything like mine in the photos, you are looking at a minimum of 5 coats, more realistically, 6 or 7. Thankfully, glitter dries very quickly, so you can continue to add layers. In addition, unlike when I used O.P.Is Gift of Gold, this did not chip off my nails in two seconds. Very happy about that!
