Cowboy Caviar

Last Friday, we had our first potluck at work. I wanted to bring something that was affordable, easy to make, and transportable. I decided to make cowboy caviar, a staple at every party my mom has ever thrown. With chips, or on its own, this is a delicious (and healthy, for once!) dish. Here's what you'll need:

2 cans of black beans
2 cans of corn
3 small tomatoes, seeded and chopped
1/2 cup of olive oil
1/2 cup red wine vinegar
1 teaspoon of minced garlic
1/2 teaspoon of salt
1/2 teaspoon of pepper
1 teaspoon of cumin
2/3 cup chopped cilantro
2/3 cup chopped green onions

1. Wash and drain black beans and corn. Mix together with cilantro, green onion, and tomatoes. For the dressing, combine the olive oil, red wine vinegar, garlic, salt, pepper, and cumin together. Pour the dressing over the vegetables, and toss to mix. Voila!

When I'm taking this dish to-go, I bring the green onion in a separate bag, and pour the dressing over the vegetables at the last minute. This way, everything stays crisp, and isn't overpowered by green onion.
