Triple Berry Pie


I'll admit, the above photo isn't one of my best by any means. However, it's going to have to do. It was extremely difficult to get a good shot of this gooey mess, but let me tell you - it's absolutely delicious! 

For my potluck at work this week, I was assigned to make something sweet. I didn't want to make a cake or cookies, since that's what I knew everyone else would make. After thinking about it for a couple of days, I finally decided to make this triple berry pie. Unlike the cheesy potato soup I most recently made, this dish is actually in season. Plus, it's simple to make (and who doesn't love something easy). Read below to see what I mean!

Here's what you'll need:

Filling Ingredients
-1 frozen pie crust
-4 cups of berries (thawed)
-1/2 cup of sugar
-1/4 cup water
-2 tablespoons cornstarch
-the juice of one lemon
-1 teaspoon of vanilla extract

Topping
-1/2 teaspoon of cinnamon 
-1/2 cup of brown sugar
-1/2 cup flour
-1/2 cup oats
-1/2 a stick of butter, cut in small pieces

1. Preheat oven to 375. Cook your pie crust for about 7-9 minutes, until light golden brown. Set aside to cool while you cook the rest of your pie.

2. Mix all your topping ingredients together, cutting in the cold butter last. Combine until you have a crumble consistency, and set aside.

3. Cook all of the filling ingredients on medium (except for the berries), whisking frequently until well blended and thick.

4. Remove filling from the heat, and stir in the thawed berries. Your berries should look glossy and shiny.

5. Pour the filling into the pie shell, and cover completely with the crumble topping.

6. Place the pie in the center of the oven, and cook for 45 minutes.

7. Let cool for at least 10 minutes before serving, and enjoy!

Remember how a couple of weeks ago I was perusing my mom's closet, and I walked away with a ton of stuff? This top was another one of my great (free!) finds. I actually last wore it here (more than three years ago), and it's crazy just to think about how much has changed since then.

However, one thing never changed, and three years later, I am still in love with this blouse. This time though, I have the perfect pair of shoes to match the pussy bow blouse. And although this is almost the exact same way I wore this top last time, I'm still happy with how this turned out. I think this is a great look for the office in the summer!

Cheesy Potato Soup


Recently, I was looking for something to make that I could pack for my lunches, and I found this recipe through Pinterest (obviously). Is it very seasonal during the middle of this humid June? Not exactly. But my oh my, is it delicious! It has large chunks of potato, is super cheesy, and loaded with bacon. What's not to love? Read below to see how to make it on your own!

Here's what you'll need:
-8 baked potatoes
-a whole pack of thick sliced bacon (12 slices)
-2 small onions, finely chopped
-2 teaspoons of chopped garlic
-1 stick of butter, cut in slices
-4 cups of chicken broth
-2 small containers of heavy cream
-a splash of milk of your choice
-1 bag of shredded cheddar cheese (2 cups)
-salt and pepper
-2 tablespoons of cornstarch (I used 3)
-green onions for garnish

Instructions

1. Dice four of the baked potatoes into small bite-sized pieces, skins and all. With the remaining four baked potatoes, scoop out all the potato, and mash until smooth. Discard the skins of these potatoes.

2. In a large stock pot, carefully fry all the bacon until crisp (I only did a little at a time, because I knew this was going to make a mess). As you finish cooking the bacon, removed to a paper-towel lined plate and let cool. Crumble into pieces when cool enough to handle. Do not drain any of the bacon grease.

3. Add your chopped onion and garlic to the bacon grease. Cook over medium heat until softened. Add the butter, and stir into the mixture until melted. Next, add the chicken broth, heavy cream, diced potatoes, and mashed potatoes; stir to combine. Splash a little milk into the mixture if the soup seems very thick. Heat soup thoroughly, but don't let it boil. Add all the cheese at once, and stir until melted. Shake a little salt and pepper, to taste. Finally, add in all of the reserved crumbled bacon (yum)!

4. Place the cornstarch in a small bowl, and combine with equal parts water to create a slurry. Add the slurry to the soup, and stir constantly, until thick.

5. Serve with cheese, bacon, and green onion. Enjoy!

This recipe takes awhile, but makes a ton! I freezed about half, and have been eating the rest for lunch or dinner. Like I said before, this isn't the best dish for summer, but it will be great for the colder months! Pin It

This weekend, I went on an all out shopping trip with my mom and aunt at Potomac Mills and Tysons Corner. I had such a great time, but it's probably going to be my last big trip for awhile! I got a ton of great deals (like a Tory Burch skirt that was originally priced for $425, and purchased for $39!), but now I'm broke. Ah, well it was all worth it. As Carrie Bradshaw said, "I like my money where I can see it...hanging in my closet."

Another one of my great finds this weekend with this super cheery floral printed wrap dress from Kate Spade. When I saw it on the floor, I was instantly drawn to it. Lucky me, it was the only dress of its kind in my size, and a perfect fit! I bought it on the spot. I paired my dress with another new item, these strappy nude heels. They are simple and clean, and the perfect addition to my summer work wardrobe. Finally, I added a touch more of color with these aquamarine drop earrings. I love how this turns out - it feels like summer! Pin It

Yesterday marked the official first day of the summer, in addition to national wear your Lilly day! Unfortunately, I was trapped at work at all day and wasn't able to embrace as much sunlight as I intended. However, there was nothing stopping me from wearing from Lilly on the job!

Originally, I thought I would wear one of my favorite sundresses - the epitome of the brand, in my opinion. At the last minute though, I changed my mind and decided to wear this floral printed tank. To keep things office appropriate, I paired it with one of my favorite pairs of jeans and a cheery lemon cardigan. A super simple and fun look that was perfect for casual Friday.

Van D'Go and Turquoise & Caicos



Today may be the first (official) day of summer, but I am still embracing this spring's pastels. For awhile, I had really only been wearing nail polish colors that I felt were "natural," i.e. pinks, reds, and other neutrals. Now that I'm out of that weird little funk, I am back to wearing fun, bright colors! This week's manicure reminds me of juicy watermelon - one of the most refreshing snacks on a hot summer day. The green polish is Essie's turquoise & caicos, and I used Van D'Go (also by Essie), on my ring fingers. I'm so glad I broke free of my natural polish rut; I have so many old polishes that I'm excited to wear again.

Back in Black

I don't wear a lot of black. I don't know why, really, but I think it's because it doesn't fit my personality. I like to think I am colorful and fun person, and black doesn't mesh with that. This weekend though, I was rummaging through my moms closet, trying to find a couple of pieces to walk out with. This top, was one of the few things that I have snagged. I wasn't sure what I would wear it with, but I knew I would think of something eventually.

For whatever reason, I decided to pair it with an all black ensemble. Black trousers, black handbag, and black pumps. I kind of feel like I'm going to a funeral, but I don't hate it as much as I thought I would. As I walked out the door, I couldn't resist adding a pair of aquamarine drop earrings. In the end, I think my look turned out very polished and professional, which I was quite pleased with. It was only until I walked out of the office at 5:30 that I regretted my all black ensemble (as by that point it was 95 degrees). Oh well!

Father's Day


A pretty a-typical family vacation car trip. My dad always drove, and I would be in the bucket seat bothering him to play the alphabet game with me (circa 2006).

And finally, today. 

Happy Father's day to all the dad's out there, but especially my dad. We argue more often than we get along, but I couldn't have asked for a better dad. To the man who gave me a love of photography, took me to my first baseball game, and taught me how to maximize savings at the grocery store by couponing, thank you. I wouldn't be the person who I am today without him!

Cloud and Shambolic



My first week at my new job, I painted my nails with one of my all time favorites, Revlon's cloud. After that, I vowed that I would try to paint my nails at least every other week. Well, let me tell you, this is the first time I have painted my nails since that post. Blame it on laziness and combination of other things, but I really want to get back in the habit of doing my nails again.

Of course, I ended up using the exact same color as I used last time (I love it that much). The only difference is that this I paired it with my new Butter London shambolic polish. It's been out for awhile, but when I found it on clearance at Nordstrom rack, I couldn't resist this glittery polish. It's a rich eggplant base with magenta, blue, and red glitter throughout. It's a great complement to my lilac polish, but I know it will look great with navy blue or black, as well.

Chambray, I love you

You know, when I first noticed chambray button-ups gaining popularity a couple of years ago, I wasn't into the style at all. Eventually, I changed my mind, and I bought one at the Delia*s warehouse sale and never looked back. The point of this story is - thank goodness I did! Chambray has become a staple in my work wardrobe: it's more professional than a tee shirt, it looks great with everything, and it's super comfortable.

Today, I paired my chambray button-up with a bright floral print skirt, sequin capped flats, and a simple pearl bracelet. It's been humid and rainy the last few days, and this skirt was just the pick me up my outfit needed!

1. It took three years of DAILY use to notice "established" was spelled wrong on my water bottle.

5. Listening to the cows sing with my nephew on the chocolate factory tour at Hershey Park.

6. Nothing like a beautiful sunset to end the night.

7. I work at a Fortune 500, and someone can't spelled "use." #facepalm

8. The J. Crew store at the outlets had a line just to get in the store this weekend because of a fire hazard. And yes, I waited in line for a half an hour. Hello, I couldn't miss out on  40% off everything plus an additional 10% off!

Pineapple Salsa

Let's talk about salsa. In the words of Icona Pop, "I LOVE IT!" On my blog, I've already written three different posts with a few of my favorite recipes. And today, I am back again with a new, sweeter option - pineapple salsa. It's the best of both worlds for me - sweet and salty. Paired with grilled chicken, atop a fresh garden salad, or just with tortilla chips, this salsa is the bomb dot cot. Yeah, I just went there.

Here's what you'll need:
-1 jalapeno
-1 tomato
-1 lime
-1/2 a fresh pineapple (a can of crushed pineapple would work, too)
-1/3 red onion
-large bunch of cilantro
-1 tbsp of olive oil
-1/4 tsp of cumin
-pinch of salt and pepper



Chop up the pineapple, cilantro, red onion, tomato, and jalapeno. Squeeze the juice of the lime over your chopped mixture, and add the olive oil, salt, pepper, and cumin. It's as easy at that - enjoy!

Early Mornings

Let me just say: getting dressed in the "morning" was a lot easier when the "morning" meant 10 a.m., or even 8 a.m., back in college. Now that I am officially a member of the working society, I no longer have the option of leisurely getting up to start the day, I have to get up when the first alarm goes off (5:40 a.m., on the dot).

Unless I plan something the night before (which almost never happens), I start every morning staring at the clothes in my closet trying to think of something different to wear. Occasionally, I get a random source of inspiration, and will think of a cute ensemble instantaneously. Most days though, I settle on a combination I have worn in the past, or something super easy. Today was one of those days when nothing seemed right, so I went with something that I know works every time: chambray and colored denim. For finishing touches, I added sequined flats, and a simple pearl bracelet. Hopefully I can think of something more creative tomorrow!

Color Me Happy

Last night, I met a friend in Tyson's for some dinner and froyo. Since moving to northern Virginia back in February, this was only my second trip to my favorite mall. As I walked in, I promised myself that I would behave, and wouldn't buy anything I didn't need.

I was doing so well, until I was just about to leave and I passed C. Wonder. Recently, I have fallen in love with everything in their store, and I couldn't resist just stopping in for just a moment to browse the clearance section. No more than 10 minutes later, I was walking out with this beautiful silk pussy bow blouse. I just couldn't resist! At more than 50 percent off, the top was a bargain, and I know is going to be extremely versatile in coming months. Today, I paired it with a simple a-line skirt, nude pumps, and a skinny glittered belt. Next time, I think I'll go for a more casual approach, but this was perfect for a day in the office.
