Avocado Black Bean Salad

Let me tell you something: looks can really be deceiving. Like this salad, for instance. It doesn't look super tasty, I can tell you that just looking at this photo. But if you can get past the photo to get the ingredients and whip together this super simple avocado black bean salad, I think you'll agree that this is simply delicious. 

What makes it even better? It's healthy, easy, and you probably have most of the ingredients on hand. I enjoyed eating this fresh and creamy salad on its own, but I also think it would be great on top of mixed greens or with tortilla chips. Enjoy!

-1 can of black beans, rinsed and drained
-1 tomato, seeded and chopped
-1 small red onion, finely diced
-half a bunch of green onions
-half a bunch of cilantro
-1 jalapeno, seeded and chopped
-1 avocado, cubed
-1 lime
-2 tablespoons of olive oil
-1/4 teaspoon of black pepper
-1 teaspoon of cumin

1. Add your black beans, tomato, red onion, scallions and jalapeno to your bowl.

2. Scoop your avocado out of the skin, and cube. Add to the bowl.

3. Throw in the pepper and cumin, and the juice of one lime.

4. Drizzle the olive oil over the mixture, and toss until everything is well mixed. Top with fresh cilantro.
