Mmm, I love taquitos! I've only ever had the frozen variety though, so when I found this super simple recipe on Pinterest, I had to give it a try. Thankfully, these were so easy to throw together (what isn't when a slow cooker pot is involved?) and they made for a great dinner while watching Sunday football.
(makes about 10 taquitos)
-2 boneless skinless chicken breasts
-1 tsp chili powder
-1 tsp garlic powder
-1 tsp cumin
-salt and pepper
-8 oz cream cheese
-1/3 cup water
-1/2 cup Mexican blend cheese (I used Colby jack)
-10 6" flour tortillas
1. Add chicken, chili powder, garlic powder, cumin, salt and pepper (to taste), cream cheese, and water into the slow cooker. Cover, and cook on low 8 hours, or on high for 4 hours.
2. Minutes before serving, remove chicken from the slow cooker, and shred with two forks. Return to slow cooker, and let it cook for about 15 more minutes.
3. Preheat oven to 400. Place about 2 tablespoons of the chicken into the middle of each tortilla. Top with a tablespoon or so of shredded cheese. Roll tightly, and place in a single layer on a greased baking sheet. Bake 10 minutes, until the tortillas are slightly browned and the cheese is melted. Enjoy!Pin It
